Rocket is a very ‘English’ leaf, and has been used in salads since Elizabethan times. It has a strong, peppery flavour, and the leaves have a slight ‘bite’ to them. If you see ‘rucola’ or ‘arugula’ for sale or on a restaurant menu – it’s the same thing. Rocket has a fresh, tart, bitter, and peppery flavor. The strength of flavour varies with wild rocket being the strongest.
For a different variation on traditional pesto try the recipe below for a delicious rocket version
50g pine nuts
50g parmesan (or vegetarian alternative)
150ml olive oil
1 garlic clove
Combine the pine nuts, rocket, Parmesan, olive oil and garlic clove in a blender. Season and blend to a paste. Will keep in the fridge for up to 5 days.
Use with pasta, chicken or anything you fancy!
